Well-kept real ale, served at the right temperature should be naturally carbonated and flavourful. Like any artisan product, a real ale requires special handling and storage to ensure it is consumed at its best.

Four tips for finding real ale.
No.1 Talk to the people behind the bar. They may have extensive knowledge about the beer on offer. Don’t let the odd blank look or negative experience dissuade you from persevering. It’ll help you identify the best places to seek out live and cask-conditioned beer.
No.2 Look at the equipment used to dispense beer. It is usually visible on top of or behind the bar. Cask-conditioned beer is most likely to come from a traditional hand-pull or direct from the cask via a tap. Serving live or cask-conditioned beer from a smaller metal tap, known as a standard bar font, is also increasingly likely due to modern equipment and the wider range of containers used by brewers today.
No.3 Talk to brewers! If you’re lucky enough to live near or have access to a great brewery ask them to recommend which pubs they think take the best care of their beer. You can’t get a higher recommendation than from the people behind your favourite brew.
No.4 For real ales from other containers, look out for terms like ‘bottle conditioned’ or ‘can-conditioned’.
